But beware! For some reason, mayonnaise is impossible to whisk in a plastic bowl, as well as in a jar that is too wide. At least it didn’t work out for me…

Basic Mayonnaise With Olive Oil Ingredients

  • ½ a cup of olive oil
  • 2 egg yolks
  • 3 teaspoons of lemon juice
  • 1 teaspoon of mustard (optional)

Your first step is to blend the two egg yolks. You can do this by hand with a whisk or use a blender for easier mixing. If using mustard, add it into the egg yolks and blend a bit more.

Once this is sufficiently blended, then add the 1 teaspoon of the lemon juice. With your blender on low speed, mix these ingredients together completely.

After it is completely mixed, start adding the ½ cup of olive very slowly. It is important to drip the oil in slowly, because you are creating an emulsion.

If the oil is added too quickly, it will be nearly impossible to save your mayonnaise recipe. In fact adding the oil in drop by drop is the preferred method.

Mix these ingredients together non-stop with your blender or whisk. If you need to stabilize the bowl, place a towel underneath it for better traction.

As you begin to add more of the olive oil, the homemade mayonnaise will begin to thicken. Once it starts to thicken up, then you can begin to add in the oil at a faster pace.

When the final oil is incorporated and the mayonnaise is thickened to your liking, then you can add the remaining 2 teaspoons of lemon juice.

Add a dash of salt and pepper and then take a taste of this delicious and healthy recipe you have created. Your palate will be delighted!
